Caramel refers to caramelized sugar, traditionally made by dissolving sugar in a pan of water. The rich flavour and coloru of caramel comes from the process of heating and melting sugar.
Applications: ice cream, desserts, cappuccinos, coffee, milk, hot and cold chocolates and milkshakes.
Ingredients
Glucose syrup, caramelized sugar (19 %), water, sugar, flavour, thickeners: agar agar, xanthan gum; preservative: potassium sorbate; acidity regulator: citric acid.
